Banana Split Oat Bran Pancakes

Yield: 12 (4-inch) pancakes

Ingredients:

1cup oat bran hot cereal, uncooked
1/2cup Pillsbury BEST® All Purpose Flour
2teaspoons baking powder
1tablespoon sugar and sucralose blend for baking
1/4teaspoon salt
4 ripe bananas, sliced and divided
1cup reduced fat milk
1 large egg
Crisco® Original No-Stick Cooking Spray
1/2cup Smucker's® Strawberry Low Sugar Preserves
Smucker's® Hot Fudge Sugar Free Ice Cream Topping (optional), warmed according to package directions
Whipped topping (optional)

Preparation Directions:

1.COMBINE oat bran, flour, baking powder, sugar and salt in small bowl. Mash two ripe bananas; combine with milk and egg. Add egg mixture to flour mixture, stirring just until combined.
2.HEAT griddle or large skillet over medium heat. Spray surface with no-stick cooking spray. Pour scant 1/4 cup of batter for each pancake onto hot surface. Cook until bubbly; turn and cook remaining side until golden brown.
3.COOK preserves in small microwave-safe bowl on HIGH (100% power) for 15 seconds or until melted. Stir. Serve pancakes topped with sliced bananas, drizzled strawberry preserves and hot fudge; dollop with whipped topping, if desired.
