Sweet Bunny Cupcakes



Prep time: 1 hrs
Yield: 24 bunny cupcakes

Ingredients:

1 (18.25 oz) package Pillsbury® Yellow Cake
1 cup water
1/3 cup Crisco® Vegetable Oil
3 large eggs
1 (16 oz) container Pillsbury® Vanilla Frosting
6 drops green food color
6 ounces cream cheese, softened
5 1/2 cups powdered sugar
1 teaspoon lemon extract
Candy decors
Decorating icing

Preparation Directions:

1. PREPARE and bake cupcakes as directed on package using water, oil and eggs. Cool completely.

2. COMBINE frosting and green food color in a small bowl. Blend well. Frost cupcakes.

3. COMBINE cream cheese, powdered sugar and lemon extract in medium bowl. Beat with electric mixer until smooth. Add more powdered sugar, if needed, to make it stiff enough to handle.

To Make Bunnies

1. USE about 1 tablespoon cream cheese mixture to make the body of each bunny by rolling it between hands to form a cylinder shape about 1-3/4" long. Pinch off small amounts of remaining cream cheese mixture to create feet, tail and ears. Make small round balls for front feet and tail, and small oval shapes for back feet. Place "feet" on frosted cupcake spacing them to fit the size of the body, then put the body on top of the feet. Put on tail. To make the ears, roll small round cylinders about 1/2" long, making it broader at one end for base of ear, and then tapering it to a point. Attach to "bunny".

2. DECORATE bunnies with candy decors and decorative frosting.
