Snickerdoodle Crème Cookies
COOKIE INGREDIENTS
1 box Pillsbury™ Moist Supreme® Yellow Cake Mix
Additional ingredients per packaging instructions
¼ cup sugar
1 tablespoon ground cinnamon
CRÈME FILLING INGREDIENTS
1 cup Confectioners’ sugar
1 teaspoon vanilla extract
½ cup butter
2 tablespoons milk
COOKIE DIRECTIONS
Step 1
Combine yellow cake mix with oil and eggs and chill the dough for about an hour.
Step 2
Once the dough is cold and firm, heat oven to 350°F and line two baking sheets with parchment paper.
Step 3
Using a 1-inch cookie scoop, shape your dough into about 2 dozen balls.
Step 4
Combine ¼ cup sugar and 1 tablespoon ground cinnamon. Roll each ball of dough in cinnamon sugar. Place each ball of dough onto baking sheets, 2 inches apart.
Step 5
Bake for 8 to 12 minutes.
CRÈME FILLING DIRECTIONS
Step 1
Combine all filling ingredients in a stand mixer and mix on high until smooth.
Step 2
Spread on half of the cookies and place another cookie on top of the filling to form a cookie sandwich.
